Abstract

This study provides a theory based answer to the question how the VD can contribute to increase the sustainability of campus food and a quantitative and qualitative analysis of the students’ support of the VD at the Universities of Bremen, Groningen and Oldenburg. The effects on the environment of vegetarian food and the way how the Veggie-Day could support the campus food sustainability were analyzed based on earlier research. Furthermore, the extent to which the students of the three universities would accept or reject the idea of Veggie-Day and the students’ reason for the decision whether to accept or reject the VD have been statistically analyzed and compared based on data gained from a questionnaire answered by 439 students of the universities during a period of one month. While slightly varying per university, 81.46% (356) of all students would accept and 18.54% (81) would reject one VD per week.
